Blue Crab

 

This species of crab mainly come from areas such as the mid Atlantic region, Florida and along the Gulf states. Its scientific name indicates beautiful and savory, which is exactly what it is.

Just some general background knowledge to get you started;

It can be unfortunately stated that it can sometimes be a lot of effort to extract the crab meat from the blue crab. This is because there is very low amount (typically 10-15%) of the entire body weight that consists of meat. These crabs grow by molting their shell then growing back a larger one. During this molting phase, there is a short time period when the crab comprises 2 shells, the old hard shell and the newer soft shell. Many people who know their crabs will only consume the soft shelled crabs due to less effort, thus easier eating. 

 There are various types of crab meat within the Blue crab;

  1. Lump meat is the most expensive part of the blue crab and is situated next to the backfin. This meat is also the largest pieces of meat in this crab.
  2. Backfin is the white body meat that also includes flaky meat as well as the lump meat.
  3. Flake meat.
  4. Claw meat is the brownish meat.
