Crab and Swiss Omelet

 

 

Ingredients:

 

  • 2 tablespoons butter 
  • 1/2 cup sliced fresh mushrooms 
  • 4 eggs, separated 
  • 2 tablespoons milk 
  • 1 cup cooked crab meat 
  • 1 cup shredded Swiss cheese 

  

Preparation:

 

  1. Using a large non-stick skillet, place the butter in a medium-high heat.   
  2. Add in the mushrooms and stir. Continue to cook until it becomes tender. This should take around 5 minutes.   
  3. Next, transfer the fried mushrooms onto a plate. And set the skillet aside.  
  4. Then beat the egg yolks and the milk. Continue until it is fully blended.  
  5. In a different bowl, beat the egg whites. Use a dry beater and continue until the peaks form.  
  6. Add the yolk mixture into whites. Fold them in.  
  7. Place the skillet back to medium-high heat. When butter starts to sizzle, add the entire egg mixture.   
  8. Add mushrooms and crab meat on the top. Make you sure you cover it evenly. Let it cook for around 3 minutes.   
  9. Then add some Swiss cheese.   
  10. Carefully fold the omelet over making it a semicircle.   
  11. Let it cook and cover it for 3 minutes  

This makes a delicious and hearty breakfast.
